I started doing some research on how to get the cooking done quickly and found a group of recipes called one pot recipes. They only require one pot to cook everything in the dish. It makes me insane when I see recipes that require the use of tons of pots and pans. Who wants all that cleanup? Certainly not me…no time for all that craziness especially during the holidays.

One Pot Chicken Lo Mein is a new twist on a holiday favorite in our house – Chicken Lo Mein. My husband’s family usually orders Chinese Food on Christmas Eve so that we only have to cook one meal over the holidays. This tradition has replaced the Feast of the Seven Fishes that my family usually celebrates. Most of my immediate familyprefers Chinese Food over the fishes that are served on the Feast of the Seven Fishes, including, but not limited to salted cod andOctopus salad. Just imagine what this holiday was like for a child (me) that hated eating fish…horrific!

Chicken Lo Mein Ingredients

  • 1pound boneless chicken breast, cut into small strips
  • 1 (16oz.) boxlinguini
  • 5 ounces matchstick carrots
  • 1red bell pepper, julienned
  • 8 ounces mushrooms, pre-sliced
  • 4 green onions, sliced into 1-inch strips on an angle
  • 3 large cloves garlic, minced
  • 2/3 cup reduced-sodium soy sauce
  • 1 teaspoon corn starch
  • 1boxSwanson 100% Natural Chicken Broth
  • 2 tablespoons olive oil
  • 1 can bamboo shoots, drained
  • 1 can chopped water chestnuts, drained

How to Make Chicken Lo Mein?

    • Start by chopping the chicken into strips and julienne the red pepper, and mince the garlic cloves.
    • Place boneless chicken breast, 16 ounces oflinguini,5 ounces matchstick carrots,1julienned red bell pepper, 8 ouncessliced mushrooms, 4 angle slicedgreen onions,3 minced fresh cloves garlic,2/3 cup reduced-sodium soy sauce,1 teaspoon corn starch,1boxSwanson 100% Natural Chicken Broth,2 tablespoons olive oil, 1 can drained bamboo shoots, and 1 can drained chopped water chestnuts into alarge stockpot.     • Cook all the ingredients on high until it starts to boil.
    • Cover and simmer on medium heat for 15 minutes occasionally stirring the pot.
  • Take off the heat after 15 minutes of simmering and let sit uncovered for 5 minutes before serving.
