What Kind of Mushroom?
The most common mushrooms to cook are white mushrooms or small brown button mushrooms like baby bellas. But we’ve tried it with chopped portabella, crimini and oyster mushrooms. All are great! This awesome white wine mushroom recipe is the perfect vegetable side dish at your next gathering.
Substitute for White Wine?
If you don’t want to use white wine, you can use a little bit of balsamic vinegar in place of the wine.This just might be the recipe to get all your mushroom-hating friends to cross over to the mushroom-loving side. In fact, it’s so good, you might want to double the recipe because it gets gobbled up real quick.

Ingredients
- 16 oz. (454 g) small button mushrooms (1 pound)
- 1/4 cup (60 ml) olive oil , divided
- 4 cloves garlic , chopped or crushed
- 1 onion , minced
- 1/2 cup (120 ml) white wine or broth
- 1 Tablespoon (15 ml) lemon juice
- 1/2 teaspoon (2.5 ml) chili flakes
- 2 Tablespoons (30 g) butter
- 2 Tablespoons (30 ml) chopped parsley
- kosher salt , to taste
- fresh cracked black pepper , to taste
Instructions
Brush the mushrooms clean. Keep the mushrooms whole, or if they are large, cut them in half.
Heat large skillet over high heat. Add half of the olive oil (2 tablespoons-30ml), then mushrooms. Cook and stir mushrooms until they start to brown and caramelize, about 3-5 minutes.
Add remaining olive oil and then add onions and garlic, cook until translucent.
Add wine, lemon juice and chili flakes. Cook for about 2 minutes or until liquid reduces down a bit.
Add butter and chopped parsley, cook for an additional 1 minute. Season with salt and pepper. Serve warm.

Hi Ashely! Yes, cook the chicken ahead of time and use the same pan with the chicken flavor to cook the mushrooms. Then serve the chicken and mushrooms together. Enjoy!

Do you not wash the mushroom before you cook ? If I were to wash it wil it affect the texture and taste of htis dish ?

We usually don’t wash the mushrooms first, just brush off any loose particles. If you want to wash them, then it will just take a little longer to cook off the moisture.
